Cabbage Soup aka "Miracle Weight Loss Soup"

The best part of this delicious soup is you can eat as much as you want, whenever you want!

Ingredients

  • 1/2 head of cabbage chopped
  • 1 cup celery diced
  • 1 cup white or yellow onion diced
  • 1 cup carrots diced
  • 1 red or green bell pepper diced
  • 2-3 cloves garlic minced
  • 4 cups chicken broth preferably organic
  • 14 ounce can basil oregano, garlic diced tomatoes (see note below)
  • 1 Tbl Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • few shakes of black pepper
  • 1/2 teaspoon salt optional

Instructions

  • Pour the chicken broth and canned tomatoes into a large pot.  Stir in the remaining ingredients.
  • Bring to a boil and then reduce heat.
  • Cook until cabbage is tender, about 20 minutes.
  • Taste and adjust seasoning if needed.

Notes

I tend to use tomatoes with fire-roasted peppers and often double the amount to two cans.
